Karl's Kathy's Recipes: Chili Con Carni

This recipe is a favorite around our house! It was created by Kathy's mother, Pamela Wilson Klein, and is from Mother's Cook Book as compiled by Kathy's sister Laurie from their mother's hand-written notebook.

Cut
  • 3 slices bacon
into small pieces. Brown well and add
  • 1 medium onion, diced
  • 1 teaspoon chili powder
Add
  • 1 pound ground beef
and brown thoroughly. Add
  • 2 28-ounce cans kidney beans, with liquid
  • 1 28-ounce can stewed tomatoes
  • 2 tablespoons sugar
  • 3 tablespoons vinegar
Simmer slowly for about 30 minutes. Season to taste. Serves 3-4.

(This is even better the next day!)
