Karl's Recipes: French Toast

I adapted this to my tastes from several different recipes for french toast, or pain perdu.

Preheat oven to 200° F.

Combine
  • 4 eggs
  • 1/2 cup milk
  • 2 tablespoons raw sugar (see below)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon, ground
  • 1/8 teaspoon nutmug, ground
  • 1/8 teaspoon salt
and beat until well-mixed and slightly frothy. Depending upon the bread being used, you may want to double the amount of sugar, or for plain white bread try substituting maple syrup.

Double this recipe
Convert to Metric

Melt

on a griddle or large frying pan.

Working with one slice at a time, dredge

in the egg mixture, getting each side thoroughly coated but not soaked, then transfer to the griddle and sauté each side until golden brown. Unless you have a huge griddle, you won't be able to sauté more than two or three slices at a time, so transfer the finished slices to a flat baking dish in the oven to keep them warm until ready to serve.
