Karl's Recipes: Blueberry Muffins

Years ago I found an excellent blueberry muffin recipe, which then evolved as bare spots in the cupboard provoked various mutations. The brown sugar and molasses add some character to the batter while not overpowering the relatively delicate blueberry flavor.

By leaving out the baking power, extraordinary blueberry hockey pucks can be made!

Double this recipe
Convert to Metric
Preheat oven to 400° F.

In a large mixing bowl, sift together

  • 2 cups flour
  • 3 tablespoons sugar
  • 2 tablespoons dark brown sugar
  • 2 teaspoons baking powder
Melt
  • 1/2 cup butter
then beat in
  • 2 tablespoons molasses
  • 1 egg
When well blended add
  • 1 cup milk
then add liquid mixture to flour mixture and combine. Gently mix in
  • 1 cup fresh blueberries
and spoon mixture into a buttered muffin tin. (There's enough batter for 12 muffins.)

Bake on upper rack for 20 to 25 minutes or until golden brown.
