Karl's Recipes: Karl's German Apple Pancake

This is really my mother's recipe, but they were a favorite of mine so she named them for me. The recipe allegedly serves four. Two is more like it!

Convert to Metric
Preheat oven to 450° F.

In a 9" or 10" skillet with an oven-proof handle, melt

  • 2 tablespoons butter
Arrange
  • 2 apples, sliced
in a single layer in the butter. Sprinkle with
  • 2 tablespoons brown sugar
  • 3/4 teaspoon cinnamon

Sauté until the apples are slightly soft, stirring frequently, about 5 to 6 minutes.

Beat

  • 3 eggs
  • 1/2 cup milk
  • 1/4 cup flour
  • 1/2 teaspoon salt
Pour over apple mixure. Bake at 450° F for 8 minutes. Remove from oven and sprinkle with
  • 2 tablespoons brown sugar
Return to oven, reducing heat to 375° F. Bake until evenly browned, about 8 to 10 minutes.

Loosen pancake around the edges. Cut into wedges and serve.
