The way I heard it, the mechanism for folding the wingtips weighs quite a bit and the airlines preferred to have that weight allocated to paying passengers, rather than the wingtip-folding machinery. I saw the only example of the folding wingtip at Boeing's little museum at Paine Field in Everett.
