Although my experience of 747 Classic flight engineers panels is
limited, I am an instrument engineer.

I would have thought that the magnetic fields around any panel were
extremely small as every instrument design has to pass a compass safe
distance test. I would have thought that magnets in the headset speakers
clamped to the cranium posed a far greater threat.

As for the "electric" fields, do you mean electro-static voltages? As
far as I can tell, the maximum voltage at an engineer's panel is 200
volts AC, around the same as the domestic UK supply.
