All airliners operated under FAR 121 are certified under FAR 25, which
dictates that the operational weights have the loss of the critical engine
at the critical takeoff point figured in.

Plus, the B757 is the most overpowered airliner around, and some pilots I
know call the B757 the crotch-rocket.
